Ingredients

1. Instant Mashed Potato flakes prepared to create 4 servings. (usually includes 1TBLs margarine. 1 1/2C Water, 1 1/3C potato flakes, and 1/2C milk, all of which have been included in the calorie count) Real mashed potatoes may be substituted.
2. 1 bag frozen mixed vegetables
3. 2 cans (3oz) light Tuna packed in water.
4. 3 TBLS Fat Free Mayo
5. 4 slices Kraft free American cheese singles
5. Paprika
Directions
Prepare instant (or real) potatoes as instructed on box (or recipe)
preheat oven to 350
Empty frozen vegetables into a strainer, and rince with warm water until separated.
In a large casserole dish, combine drained tuna, veggies, and mayo. Use enough mayo to bind together the tuna and the veggies (between 2 and 3 TBLS)
Layer American cheese over the mixture.
Spoon mashed potatoes on top. Use back of spoon to create decorative "peaks" in the potatoes.
Sprinkle with paprika.
Bake on 350 for 25-35 minutes, until hot throughout. (25 is usually plenty)
When finished, divide into 4 servings and enjoy!
This dish also keeps well in the fridge, so it's a good make-ahead dish.
