Ingredients

    dry ranch packet
    1c light sour cream
    1 cup olive oil mayo
    16 oz corn bread
    2 can pinto beans, rinsed & drained
    2 cans whole kernel corn drained
    1 med bell pepper chopped
    2 cups shredded mexican cheese 2%
    6 green onions
    3lg tomatoes chopped

Directions

combine ranch, sour cr and mayo. set aside.
crumble half of cornbread into serving bowl (triffle bowl works well) Layer in this orderr 1/2 of each...
beans, gr pepper, ranch mixture, corn, tomatoes, cheese & green onion. Repeat. Cover & chill for at least 2 hours. Serves 8-10
