Introduction

Ingredients

    1 can (14.5 oz) chicken broth
    1/3 cup chutney (mango or chili)
    1 T olive oil
    4 cloves garlic
    1 c White Basmati Rice
    1 T curry powder
    4 cups spinach (frozen)
    1/2 cup lentils
    1 1/2 cup cubed sweet potatoes
    1 cup cubed eggplant
    1/2 cup raisins
    1 cup hot water

Directions

Heat olive oil in large pan, add minced garlic, cook 1 min.
Add rice, broth & chutney. Stir and cook 1 minute.
Add greens, lentils, sweet potato, eggplant, and raisins.
Bring to a boil, then simmer about 20 minutes or until vegies are tender and water is absorbed.
