Introduction
One of my favorite on-the-go breakfast sandwiches. I throw just about anything together to make these, but this combo is one of my faves. One of my favorite on-the-go breakfast sandwiches. I throw just about anything together to make these, but this combo is one of my faves.Number of Servings: 1
Ingredients

1/3 cup egg substitute
1/8 cup cooked spinach
2 tbsp shredded provolone cheese
1/8 cup diced tomatoes
1 tbsp diced onion
1 tbsp diced green or red pepper
1 slice turkey bacon, cooked and crumbled
ground black pepper to taste
1 Low-Carb tortilla
Directions
Mix all ingredients together except tortilla. Place in large microwavable glass bowl.
Microwave on high power for about 2-3 minutes, depending on your microwave. Watch closely as it cooks! When egg substitute puffs up and isn't runny in middle, it is done. Don't overcook or egg mixture will get hard!
Add entire bowl to warm low carb tortilla and wrap up. Enjoy!
