Introduction

Number of Servings: 40

Ingredients

    2 cups whole grain flour
    2 t baking powder
    1/2 t salt
    1/2 t ground nutmeg
    3/4 cup (1 1/2 sticks) butter
    1 cup dried currants (preferred) or raisins
    2 eggs
    1/4 non-fat milk
    1 t vanilla

Directions

Makes 40 2" rounds.
Mix dry ingrediants in large bowl. Cut in butter til mix resembles coarse meal. Stir in currants.
In separate bowl, whisk eggs, milk and vanilla. Add all at once to dry ingrediants, and stir til well-combined, without over-mixing. Mixture will be sticky, like cookie dough.
Roll out on well-floured surface, and cut dough into 2" rounds with a juice glass or smaller cutter. Set aside in layers separated by wax paper.
Clean up from this, and set your electric non-stick griddle to heat, around 325. You can lightly butter the griddle or not as you choose. Gently "fry" the cakes in batches for a few minutes on each side, turning when ready. Finished cookies will have a lovely flaky quality when served warm with a yummy tea - don't forget the cucumber sandwiches!
