    2 sweet potatoes, peeled and cubed
    1 onion, quartered
    6 c water
    1 tbsp veg stock powder
    1 c pearl barley
    1-2 tbsp tomato paste
    1/4 tsp herbs de provence
    1/2 tsp paprika
    1 can black eyed peas, drained and rinsed
    1 can red kidney beans, drained and rinsed
    salt and pepper to taste


Place sweet potatoes in water and bring to a boil. Add onion, veg stock powder tomato paste, herbs and spices, and barley. Reduce heat to med-low and simmer for 30 minutes. Add beans and continue simmering for another 30 minutes. Add salt and pepper to taste.
