Introduction

A delicious, creamy soup that's satisfying and healthy. This recipe is from my sister's mother-in-law. A delicious, creamy soup that's satisfying and healthy. This recipe is from my sister's mother-in-law.
Number of Servings: 13

Ingredients

    1 lb. bag dried baby limas (white or green)
    2 onions (chopped)
    3 carrots (grated)
    3 celery stalks (finely chopped)
    1 lb. cooked ham, diced (I use a 97% fat free ham steak)
    2 qt. chicken broth (8 cups) - I use Swanson's Natural Goodness Chicken Broth
    Salt & Pepper to taste

Directions

Wash beans well; add water to cover beans well. Cook slowly with ham until beans are tender (about 1 hour). Add hot water as needed. Add vegetables, broth, and seasoning. Mix well and simmer until ready to serve. Freezes well.



**This is super when you add a handful or two or fresh spinach just before serving. Grated parmesan cheese is also a nice finish. Yummy served with a warm piece of a chewy bread loaf or roll. These additions are not included in the nutritional information.

    I just don't care for celery, so I omitted it here. I sauteed the onions in a little broth first. I also used regular limas, but I soak my dried beans overnight in water first. Very delicious. - 2/6/10

    Incredible!
    The soup was so tasty and so easy. Just have to watch the water level in the beans as they cook. I set my timer for every 10 minutes to check and add water as needed. I also added a can of tomatoes. Really good for a cold night's meal. - 1/15/09
