Ingredients

    1 pound dried navy or other white beans
    400 gr ham, or a meaty ham bone
    3 med onions, chopped
    4 cloves garlic, minced
    3 celery ribs, minced
    .5 cup instant potato flakes
    .25 cup fresh parsley, minced
    salt and pepper or boullion cube to taste.
    3 quarts water

Directions

Makes about 14 cups.

Put dry beans and enough water to cover in pot. Bring to boil, boil 2 minutes, remove from heat, soak 1 hour.
Drain and rinse.
Use a big pot, add beans, ham bone or ham, 3 quarts water, boil, reduce, cover, simmer 2 hours.
Add rest of ingredients, salt and pepper to taste. Simmer 1 hour.
If using ham bone, take out, cut off meat, return to pot.
Serve.

I give 2 cup servings, but double nutritional info as it is figured on 1 cup servings.
