Introduction

I lightly dress this salad with a low cal fat free balsamic vinaigrette. My brand adds about 2.5 calories. I lightly dress this salad with a low cal fat free balsamic vinaigrette. My brand adds about 2.5 calories.

Ingredients

    5oz whole wheat penne
    1 can navy beans (small white beans)
    6 medium mushroom caps
    .25 cup red onion thinly sliced
    1lb cherry tomatoes
    1 bunch radishes sliced
    1.5 oz blue cheese crumbles

Directions

Put water on to boil
Chop onions and radishes and place in large bowl
rinse beans and add to bowl
saute mushrooms in no cal cooking spray over medium heat until cooked down
add arugula and cook down until wilted
add pasta and cooked veggies to bowl
Stir
Add blue cheese
salt and pepper to taste
makes six 2 cup servings
