Introduction

Marinated and baked Asian-style tofu with lots of flavor! Marinated and baked Asian-style tofu with lots of flavor!
Number of Servings: 4

Ingredients

    Marinade:
    - 1/4 cup tamari
    - 1 Tbsp mirin (Japanese cooking wine)
    - 1 Tbsp brown rice vinegar
    - 1 Tbsp maple syrup
    - 1 Tbsp toasted sesame oil
    - 1/4 tsp garlic powder
    - 1/4 tsp chili powder

    - 1 lb firm or extra firm tofu
    - nonstick cooking spray

Directions

1. Remove tofu from package and drain excess liquid. Wrap tofu in a clean kitchen towel and place a heavy weight on top (a book, cast iron pan, etc). This step is vital to the texture of the tofu! Press for 1 hour.
2. Whisk together ingredients for marinade and pour into a glass baking pan (11" X 7" is a good size).
3. Cut tofu into 16 equal pieces, triangles are nice.
4. Submerge tofu pieces in marinade, flipping to coat both sides evenly. Marinate in the refrigerator at least 1 hour or overnight for maximum flavor.
5. Preheat oven to 375 degrees F. Lightly coat a cookie sheet with nonstick cooking spray.
6. Remove tofu slices from marinade (which should be almost completely absorbed, depending on how long it's had time to sit) and arrange on the baking sheet, leaving space between each piece.
7. Bake for 20 minutes. Flip tofu slices and bake for 10 minutes more, or until evenly browned.
8. Serve with brown rice and veggies. Makes 4 servings, 4 pieces each.
