This is a simple salad made from stuff in the garden... or easily located in a supermarket. I like it in summer as everything is on hand and fresh. Ingredients

Cherry Tomatoes- 1 cup
Cucumber- 1 cup, diced
Lettuce- 2 cups, cut into thin slices
Scallions (spring onions)- 2 cut into small rings
Lemon juice - I Tbsp
Olive Oil - I Tbsp
Directions
Cut the cherry tomatoes in half. Dice the cucumber- I like a telegraph cucumber. Cut the lettuce into thin slices, about 5mm thick... I think of this as 70's style lettuce that my Aunt always serves. Cut the spring onions into rings the same width as the lettuce.
In a large bowl add the lemon juice and olive oil. I use a really good organic olive oil made locally, but any will do. You can add a little salt and pepper at this stage. Toss all the vegetables into the liquid and serve.
For a little variety, sometimes I add half a diced avocado, or 1/4 cup of cashew nuts, or 1/2 cup of seedless grapes, or 1/4 cup of diced feta cheese. However, all of these will change the nutritional information given.
Serves 4 (approx 1 cup servings each)
