Ingredients

    2 large sweet potatoes
    1 T. I Can't Believe It's Note Butter LIght
    1/4 cup Fat-free Half and Half
    Splenda to taste


    Makes 6 1/2 cup servings.

Directions

Peel and cut sweet potatoes into chunks. Cook in boiling water until fork tender. Transfer to food processor and blend until smooth. Add in remaining ingredients and blend until smooth and creamy.

    This tastes great and is a perfect way to have a colorful veggie to serve..nutritious and super easy to make..took this as a side instead of potato salad or reg mashed potatoes to a lunch..big hit! Will make this again! - 3/24/07
