Introduction

Ingredients

    2 cans black beans, rinsed
    1 bag frozen corn (17oz), thawed
    1/2 to 1 red bell pepper, diced
    1 small zucchini, diced
    1/2 small red onion, diced
    juice from 2 limes
    1/2 bunch cilantro, chopped
    1 Jalapeno, chopped (deveined and deseeded)
    1-2 Avocado, diced
    Salt and pepper to taste

Directions

Mix all ingredients together. Enjoy! Makes about 9 1-cup servings.
