Ingredients

Lemon Juice, 1 tbsp
Grey Poupon Dijon Mustard, 1 tsp
Extra Virgin Olive Oil, 1 tbsp
Fresh Chives, 2 tbsp chopped
Cucumber, 1 cup, chopped
Romaine Lettuce, 4 cup, shredded
Scallops, raw, 11 oz -
Natalie's orange juice, 1/2 cup (or your favorite OJ)
Strawberries, 2 cups quartered
Butter, 1 tbsp
Directions
Cook scallops in butter, or you can use an alternative. Scallops are rich and taste better cooked in butter to me.
In a large bowl, mix together orange juice, lemon juice, oil, mustard, and chives. Season to taste with salt and pepper. Add cooked scallops to strawberries and cucumber and toss with a spoon. Top lettuce with scallop mixture.
I recommend your favorite crumbly cheese be added on top but I didn't have any.
