Ingredients

    1 Large fresh cauliflower head
    1.5 lbs fresh green bean
    8 large eggs
    1.25 cups canola or vegetable oil (approx)
    1/4 cup chopped (small) onion
    1 small can tomato sauce
    1/2 tsp dried oregano
    8-10 6" tortillas



Directions

In a large pot, bring 8 cups of water to a rapid boil.
Take eggs out of refrigerate and set aside.

While water comes to a boil, separate cauliflower heads from stalk (leaving small stems at ends - about 10-12 heads), set aside. Take green beans and cut tips off at each end, set aside. Once water has come to boil, add green beans and cook for approximately 5 minutes (still firm), remove from water (do not strain water) and set aside. Add cauliflower to water and cook for approximately 5 minutes (still firm), remove and set aside.

After you have prepared vegetables, take the eggs and separate whites from yolks. Add the whites to a large bowl and whip into stiff meringue, add yolks and mix into meringue. Heat oil in large frying pan - med heat.

Once oil has heated, take cauliflower and dip into meringue mixture to cover, place gently into hot oil and cook to light brown, turning to cook all sides (approximately 2-3 minutes each side). Remove and place on paper towel or napkins to drain.

When done cooking cauliflower, mix meringue if necessary, and place green beans in remaining meringue mixture and with tongs take between 6-8 (depending how large you want the fritter) and place in pan. Cook approximately 2-3 minutes on each side and place on paper towel to drain.

Remove pan and in a small sauce pan saute onions and oregano. Add tomato sauce and cook on low heat for about 5 minutes.

Heat tortillas and serve vegetable with tomato sauce.
