Ingredients

    1-1/4 pound ground turkey
    1 bag dried black beans
    1 bag dried red beans
    1 bag dried red kidney beans
    1 pkg frozen kernel corn
    2 large carrots (or equivalent baby carrots), sliced
    3 stalks celery, sliced
    1 medium red onion, chopped
    1 medium green bell pepper, chopped
    2 pounds ripe tomatoes
    1 can of V8 juice
    2 cloves garlic
    1 tbsp Italian seasonings

Directions

Soak, clean, and rinse the beans per package directions. Brown the ground turkey. Chop the vegetables while the turkey browns. Place everything in the crockpot and stir. Cook on low for eight hours. Makes 22, one-cup servings.
