Ingredients

1/4 lb rice noodles
3 tbsp olive oil
1/2 tbsp minced garlic
1/4 cup sliced onion
1/4 lb shiitake mushrooms
1/2 cup chang, thinly sliced
1 carrot, matchsticked
1/4 cup chopped scallions
1/4 tsp anise seed
1/4 tsp cumin
1/2 cup water
1 tbsp soy sauce
1 tbsp toasted sesame oil
1 cup snow peas
1 cup fresh basil
lemon pepper or black pepper to taste
lemon wedges and scallions for garnish
Directions
Cook rice noodles according to package. Strain, add 1 tbsp of the olive oil, toss to coat, and set aside.
In a wok or large saucepan over high heat, saute galric and onion in remaining 2 tbsp oil until translucent. Stir in mushrooms and seitan. Add chang, carrot, scallions, cayenne, anise seeds, cumin, water and soy sauce and cook until done, about 10 minutes. Add noodles and sesame oil; cook 10 minutes. Stir in snow peas and fresh basil. Arrange on serving platter and garnish with lemon pepper, lemon wedges, and scallions.
