Introduction

This is a "standard" split pea soup, but without the ham. Another crockpot recipe, this can also be made on the stove. Some people like their pea soup well-chopped; if you do, make this on the stove, remove the bay leaf, and run it through a food processor until it reaches the desired consistency. Ingredients

    1-lb bag dry green split peas
    5 four-inch baby carrots, chopped
    1 cup chopped yellow onion
    2 stalks of celery, with leaves, chopped
    2 cloves garlic
    1 bay leaf
    1 tbsp coarsely ground black pepper
    3 cups vegetable broth
    3 cups water

Directions

Soak peas per package instructions. Drain and rinse, then place in crockpot. Add remaining vegetables, the broth, and the water. Cook on low for eight (8) hours, until peas are very soft. Serve with chopped parsley.

If you wish, run this soup through a food processor before eating. Remove the bay leaf before doing so.
