Ingredients

    8.8 oz. Package of dry thin rice noodles (cooked according to package)
    4 cups chicken broth
    14 oz. medium shrimp (cleaned and shelled)
    1/2 lb. shredded bok choy
    8 oz. sliced mushrooms
    2 Tbsp. fish sauce
    1 Tbsp. chopped cilantro

Directions

Bring broth and 1 cup of water to a boil. Reduce heat to medium. Add shrimp, bok choy, and mushrooms and cook 4 to 5 minutes, until shrimp are cooked and vegetables are tender. Stir in fish sauce and cilantro; remove from heat. Serve over rice noodles and garnish with cilantro.
