Introduction

Number of Servings: 1

Ingredients

    2 c. Cabbage (fresh)
    1/4c. Sweet Corn
    1/2c. Cubanelle Peppers (aka Frying Peppers)
    1/4c. Onions
    1 clove of Garlic
    1 tsp of extra virgin olive oil
    **a few dashes of adobo seasoning (I like it with Cumin added)

Directions

Wash and then chop cabbage. Slice Peppers and crush fresh garlic. Prepare your non-stick skillet with 1 tsp of extra virgin olive oil. Once skillet is hot, on medium heat, toss in your garlic. Once garlic is transparent, add peppers, onions, corn and cabbage. Add a few dashes of adobo seasoning (salt). Cook until tender. Makes 1 serving.
