This makes a ton - but freezes very well. This makes a ton - but freezes very well.
Number of Servings: 14


    Mashed Potatoes:
    4.5 lbs potatoes, scrubbed, chopped, and boiled
    - mash with
    1/2 C Buttermilk
    1/2 C Half and Half
    1/4 C Butter
    1 tsp Salt (or to taste)

    1 lb Ground Lamb
    1 Smallish Onion, chopped
    2 Carrots, chopped
    3 Stalks Celery, chopped
    1 tsp Thyme
    1 tsp Marjoram
    1 tsp Salt
    1 C Peas, Frozen
    1 C Beef Stock
    1 Tbsp Arrowroot Flour (or other thickener)


Make mashed potatoes. At same time, brown lamb w/onions. Add carrots, celery, and herbs and cook gently 10 min. Add peas. Dissolve arrowroot in cold broth, then add to pan w/ other ingredients and heat until thickens.

Put lamb mix in bottom of casserole, top w/potatoes. Bake at 350 for 30 min or until lightly browned on top.

I use two medium dishes for this, cover one closely w/foil and freeze.
