Ingredients

1 lb. boneless pork tenderloin
1 Tbsp. Olive oil
1 tsp. butter
1/2 minced green onion or shallots
2 tsp. Dijon Mustard
1 cup low sodium chicken broth
2 Tbsp. Maple Syrup
2 Tbsp. Balsamic vinegar
Directions
Makes 3 , 4-5 ounce servings.
Slice the tenderloin in 1/2 slices.
Flatten to 1/4 inch.
Season with salt & pepper if desired.
Heat Olive loil and butter in a larg skillet over med. high heat
Saute pork until brown, about 4 minutes per side.
Transfer to a plate.
Add onions to skillet and cook 30 seconds.
Mix in Mustard and broth.
Simmer until reduced by 1/4
Stir in Maple syrup and balsamic vinegar.
Simmer until l;iquids are reduced to a sauce consistency..5 minutes.
Return pork & juices to skillet
Heat to warm meat and serve!
