Ingredients

2 boneless skinless chicken breasts
1 Tbsp vegetable spread or a couple sprays of Smart Balance vegetable spray
1 small green pepper (seeded and diced)
1 packet taco seasoning
1 can of corn
1 can of black beans
1 package of Succes boil-in-bag brown rice
2 Tbsp lime juice
Directions
Cook the chicken breast in a non-stick skillet with a little vegetable spread or cooking spray. Roemove from pan and dice.
Quickly saute green peppers in the same pan. Dissolve taco seasoning in 1/4 cup water and heat with the green peppers and add cooked chicken to pan.
While that is simmering, cook brown boil-in-bag rice.
In a large bowl stir together rice, 1 can black beans, 1 can corn and the meat and pepper mixture. Season with lime juice.
- If you like this can be eaten plain or with shredded lo-cal shredded cheese or rolled in whole wheat tortillas.
