Ingredients

2 C. Old-Fashioned Oats
1/2 C. Unsweetened Coconut
1/2 C. Walnuts, chopped*.
6 Tbs. Honey
1 Tbs. Cinnamon (optional)
Directions
Preheat oven to 300 degrees. Grease cookie sheet with non-stick cooking spray. Mix oats, coconut, and nuts in bowl. Heat honey in microwave for 15-30 seconds to thin. Pour honey over the oat mixture to coat thoroughly (mixture should be damp, but not sticky). Add cinnamon if desired. Spread mixture evenly on greased cookie sheet. Bake for 15 minutes. Stir. Bake another 5 minutes. Stir. Bake 2-5 minutes until granola is golden brown. Once granola cools, store in an air-tight container.
Makes approx. 16 1/4-cup servings (4 cups).
*Tips:
Feel free to substitute sliced almonds or chopped pecans for the walnuts. Nuts should not be finely chopped.
Maple syrup can be substituted for the honey, if desired.
