Introduction

This bean salad is easy to make and goes great in a light meal. This bean salad is easy to make and goes great in a light meal.
Number of Servings: 10

Ingredients

    1 15 oz. can broad beans
    1 15 oz. can kidney beans
    1 15 oz can black beans
    1 12 oz can corn
    1 medium onion chopped

Directions

Open beans. drain and rinse.
Open corn, drain but do not rinse.
Mince onion.
Mix together.
Eat alone or mix with couscous.

Makes 8-10 half-cup servings

    Very Good
    This was surprisingly good. I was afraid of using the corn juice as the dressing, but it worked well. My daughter and I agreed that it needs some cilantro. We're going to add that tonight to the leftovers. - 4/20/09
