Introduction

This is a sugarfree version of a light dessert at less than 100 calories per serving. If you cannot have the artificial sugars, the recipe can be modified to use regular gelatin and Cool Whip with wonderful results. Ingredients

    *Buttermilk, lowfat, 2 cups
    *Dole Crushed Pineapple in 100% Pineapple juice No Sugar Added, 2 cups
    * Pecans, .5 cup, chopped
    * Sugarfree Gelatin (Jello) 1 package Lemon (3 oz)
    * Sugarfree Gelatin (Jello) 1 package Orange (3 oz)
    *Cool Whip Free whipped topping, 4 ozs (25 Tbsp)

Directions

Heat pineapple in juice until just boiling. Remove from heat, add both envelopes of Jello powder and stir until Jello is dissolved. Set aside to cool and thicken. When gelatin mix is thick, but not congealed, slowly add in buttermilk. Stir in Cool Whip until mixture is smooth and creamy. Fold in finely chopped pecans. Pour mixture into a **prepared glass dish and refrigerate until set, approximately 2 hours. Serves 12.
**(Spritz a glass 8-inch square baking dish once with cooking spray then wipe with a clean paper towel to evenly coat dish with a thin oily film and remove excess oil to make for easy serving.)
