Introduction

Ingredients

    Baked Potato, 150g
    Black Beans (cooked) .5 cup
    cheese 25g
    peppers 25g
    onions 25g
    sour cream 2 tbs
    splash of water
    salt & pepper
    a dash of cayenne pepper
    salsa on the side

Directions

Slice peppers & onions and heat in the toaster oven until they reach desired crispyness. Meanwhile, cube baked potato and mash in a bowl with beans, shredded cheese, sour cream, salt, pepper, and cayenne. Add a splash of water if needed so it mixes better-but not soupy! When pepper & onions are done, cut into smaller pieces and add to mix. Form mix into patties. Cook with nonstick skillet & spray on med/high for about 3-4 minutes on each side, until crispy. Make sure to spray the top before flipping! Serve with salsa on the side. Makes about 5 2-3" patties.
