Introduction

Simple bean dish. Goes well with my Mexican Baked Quinoa! Add a little shredded low-fat cheddar cheese, some chopped lettuce and tomato, and you've got yourself a deliciously simple vegetarian entree. Yum! Simple bean dish. Ingredients

    1 Tablespoon olive oil
    1 onion, roughly chopped
    2 stalks celery, chopped
    1/2 cup red pepper, chopped
    2 cloves garlic, smashed
    1 teaspoon ground cumin
    2 (15.5 oz) cans low sodium black beans, undrained
    2 cups water
    2 teaspoons vegetable bouillon

Directions

In a medium saucepan, heat olive oil over medium heat. Add onion, celery, red pepper, and garlic. Stir for 3 minutes, until just beginning to soften. Add cumin and stir to coat. Pour in black beans (with the bean water) and the 2 cups water. Stir in the bouillon. Bring the beans to a boil. Then turn the heat to low and simmer, half-covered for 30 minutes. Stir periodically to ensure they're not sticking to the bottom of the pan. They're finished cooking when the liquid has thickened. Serve hot. Enjoy!
