Ingredients

    .75 cups brown rice, uncooked
    .25 cups whole wheat orzo, uncooked
    .25 cups onion, diced
    .25 cups carrot, diced
    .25 cups celery, diced
    1 clove garlic, minced
    2 tsp olive oil
    2 cups chicken broth
    1 bay leaf
    .25 tsp thyme, dried
    .25 tsp salt
    .25 tsp black pepper

Directions

Makes 6 1/2-cup servings

Heat olive oil over medium heat in skillet or saute pan. The pan should have a tight fitting lid.

Cook garlic, onions, carrots and celery in olive oil with thyme, salt and pepper until veggies are soft and the onions are translucent. Transfer veggies to a bowl.

Add rice and orzo to the pan and cook until toasted and they smell nutty.

Add veggies back to the pan along with the broth and bay leaf. Bring to a boil.

Turn heat to love, cover and cook for 50 minutes.

Fluff with a fork before serving.
