Ingredients

    Sour Cream, reduced fat, 2 cup (
    Cheddar Cheese, 1 cup, shredded
    Egg substitute, liquid 1.5 cup
    Spinach, cooked, 1 cup
    Heart Smart Bisquick (mix only), 0.5 cup
    Publix Cooked Ham, 4 oz
    Onion powder, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Swiss Cheese, 1 cup, shredded
    Potato, raw, 1 cup diced
    Cooking spray

    Optional garnish(not included in calorie count):
    chopped scallions
    chopped chives
    halved cherry tomatoes

Directions

Peel and dice potatoes into 1/2" cubes, chop ham and spinach.
In a large saucepan, saute potatoes in cooking spray until cooked. Add ham and spinach and cook until spinach is wilted.
Drain on a paper towel.
In a large bowl, mix sour cream, Bisquick and egg substitute. When it is mixed together well, add shredded cheeses and salt, pepper and onion powder.
Stir ham, potatoes and spinach into cheese mixture.
Spray a 12-cup muffin tin with cooking spray. Spoon mixture into tins, bake at 350 for 30-40 minutes or until done in the center.
Garnish with chopped chives, chopped scallions, or halved cherry tomatoes.
