    1 loaf (312 grams) of french bread
    10 cloves of garlic
    3 TBSP unsalted butter, softened
    1 TBSP extra virgin olive oil
    Freshly ground black pepper to taste


Preheat oven to 500 degrees. Be sure to set oven to BAKE, not BROIL.
In a frying pan, dry roast the cloves of garlic (with the skins on is fine)--no oil, for about 6-8 minutes, until golden brown on the outside, stirring occasionally.
Remove the garlic from the pan to cool.
Meanwhile, mix the softened butter and oil together.
Once the garlic cloves are cool enough, peel and mince finely. Add the garlic to the oil and butter mixture. Grate the cheese into the mixture and mix well.
Cut the bread loaf lengthwise to get two long bread halves.
Spread the mixture generously onto the bread halves. Place the bread on a cookie sheet and place in the oven.
Bake for 8-12 minutes, rotating once, until golden brown (watch carefully to avoid burning!).
Remove from oven and let cool for 1 minute.
Add black pepper, slice with a bread knife and serve hot.
