Ingredients

* Leftover Turkey meat (about 3cups chopped)
* Carrots, raw, 1 cup, chopped
* Onions, raw, 1 cup, chopped
* *Tomatoes, red, ripe, raw, year round average, 2 cup, chopped or sliced
* Garlic, 3 cloves
* Celery, raw, 1 cup, diced
* Cilantro, dried, 1 tbsp
* Water, tap, 8 cup (8 fl oz)
* Cider Vinegar, 2 tbsp
* Olive Oil, 3 tbsp
* *Italian Sausage, pork, 4 link, 4/lb
* Butternut Squash, 2.5 cup, peeled & cubed
Directions
Makes approx. 10 1.5cup servings
Brown italian sausage in olive oil. When sausage is browned, add garlic and onion. Add vinegar to sausage and veggies and scrape bottom of pan to get all the good stuff unstuck. Add Carrots, Celery, Tomatoes, Cilantro, and Squash. Let that saute for a little bit on medium heat, stirring frequently. Add water, cover and bring to a boil. Stir and reduce heat to a simmer. Let simmer about 1 hour. After simmering I puree all ingredients and pour back into pot. Continue simmering until ready to eat!
