Ingredients

    * 1 can Black Beans
    * 1 can Yellow Corn
    * 1 onion chopped
    * 1 cup fresh mushrooms chopped
    * 1 bell pepper, chopped
    * 1cup grated cheese
    * 1/2 packet taco seasoning
    * 1 cup tomato sauce
    * 1/2 cup plain yogurt
    * 1 egg
    * 2 egg whites
    * 2 tsps olive oil

Directions

Saute onions, peppers, and mushrooms in olive oil. Mix in an 8x8 pan with beans and corn. Mix tomato sauce with taco seasoning and mix in with veggies. Combine yogurt (or light sour cream) with egg and egg whites, and cheese; beat. Mix in the pan with all ingredients, and then level out. Bake at about 375F for 25-30 minutes, until cooked through. Allow to cool for five minutes and serve with salsa.
