Ingredients

    1/2 onion
    1 garlic clove
    1 celery stick
    1/2 carrot
    1/2 cabbage
    1 1/2oz of wheat spaghetti
    1 vegetable bouillon cube
    1 tbsp. olive oil
    1 cup of canned chopped tomatoes
    1/2 cup canned green beans
    1 tsp. of dried parsley

Directions

Peel the onion and garlic clove and finely chop them. Thinly slice the celery and carrot. Shred the cabbage into small pieces. Break the spaghetti into 2 cm long pieces. Put 1 and 1/4 cups of cold water into a saucepan and bring to a boil. Drop in the boullion cube and stir until dissolved. Put the stock aside. Heat the oil in a saucepan over medium heat. Add the onion, celery, carrot and garlic. Fry for 3 minutes. Add the canned tomatoes, vegetable stock, cabbage, canned green beans and parsley. Bring to a boil then simmer for 10 minutes. Add the dried spaghetti. Cook soup for another 8 minutes, stirring from time to time to keep it from sticking.
