Introduction

This is so flavorful and light, great for the hot summer months! Very low in fat! Good served as a side or with pita bread or chips as a snack or appetizer. Ingredients

    3 med. sized ears of corn, or 2 cups frozen corn
    1/2 Cup finely chopped English Cucumber
    1/3 Cup lime Juice
    1/4 C thinly sliced green onions
    1 T. grated orange zest
    3 T. orange juice
    2 T. chopped fresh mint, or 1 T. dry mint
    1 t. cumin seeds
    1 or 2 fresh jalapeno peppers seeded and finely chopped
    salt to taste

Directions

Add cleaned corn to boiling water and cook for 5min. Drain and cool. Remove corn from cob. Mix all ingredients, season with salt. Cover and refrigerate up to one day. Flavors are best after they have been sitting for about an hour. Server as desired.
