Introduction
These muffins are eggless and very healthy with whole grain flour, wheat bran and flax meal. Start with left-over oatmeal from breakfast, then add ingredients to make a great low calorie muffin that has healthy fats and is high in fiber . They taste really great! Ingredients

3/4 cup cooked old fashion quaker oatmeal
1/4 cup flax meal
1 cup wheat bran
1 T baking powder
1 tsp baking soda
1/4 cup shopped pecans or walnuts
1/2 cup brown sugar
1 T cinnamon
1/2 cup raisins
1 1/2 large baking apples shredded (may substitute 2 medium apples or 2 over ripe-bananas)
1 tsp vanilla extract
1 cup skim or non-fat milk
2 T olive oil
If you prefer a sweeter muffin, you can add 4 packets of Splenda.
When cool spread with low-fat cream cheese or your favorite fruit jelly. Cream cheese and jelly are not included in the nutritional facts.
Directions
Yields 18 muffins. Bake for 15 to 20 minutes at 425 degree pre-heated oven.
Combine dry ingredients, then add olive oil, skim milk, and vanilla. Mix and fill muffin cups sprayed with non-stick cooking spray. Fill tins to top. Bake a little longer if needed. Remove from tins to allow to fully cool
