    400 gram chicken thigh, boneless
    1 medium onion, sliced
    150gr baby eggplant
    100 gr fresh sweet corn
    Thai peppercorns
    1 sachet Royal Thai cook-in sauce
    1 packet Uncle Ben's thai rice


Fry Chicken and onion in a wok, using a little olive oil
Add the chopped veg and pepper corns, toss gently
Add the cook-in sauce and simmer till done.
Cook the rice and serve on a bed of rice.
