Ingredients

200g tofu (smoked tastes best for this recipe)
1 tablespoon olive oil
1 red pepper
1 ripe avocado, stone and peel removed
Freshly ground black pepper
4 wholemeal tortillas
Directions
1. Drain the juice from the tofu and cut into strips. Meanwhile, heat the olive oil in a frying pan.
2. Gently fry the tofu strips for about 3-5 minutes until they become firm but not crunchy. Add the pepper and fry for a couple of minutes until softened.
3. Mash the avocado flesh and add a bit of freshly ground pepper.
4. Microwave the tortillas for a few seconds or according to the instructions, to soften them.
5. Spread some avocado mixture onto a tortillia, then place a quarter of the red pepper and tofu strips in a rectangle in the centre of each tortilla.
* You can eat the wraps as they are or heat them in a frying pan for a minute on each side to make them go crispy.
Variation: If you can't find smoked tofu, use a block of plain tofu and coat the strips in fajita seasoning or similar mixed spices.
