Introduction

Ingredients

6 large eggs
1 T. sour cream
1 tsp. Tabasco
Salt and Pepper to Taste
2 strips Bacon
3 spears Asparagus, sliced small
1 cup chopped red onion
3/4 c. Reduced fat Cheddar and Colby cheese, grated
Directions
Brown bacon in oven proof skillet until almost crispy. Add asparagus and onion and saute until onions are wilted.
While this is cooking, break eggs into a mixing bowl. Add tabasco, salt and pepper, and sour cream. Beat well with wisk.
Add the egg mixture to the sauted vegetables and bacon. Add cheese to top.
Cook on top of stove about 3-4 minutes and then put into a 400 degree oven for 25-30 minutes until eggs are set and done.
Cut into eight equal "pie pieces". 2 slices per serving. Serves 4.
