Introduction

Ingredients

Mozzarella Cheese, part skim milk, 16 oz
wesson vegetable oil, 1 cup
old elpaso enchilada sauce mild, whole can
mission white corn tortillas, whole bag
****This makes cheese ones but you can always add ground turkey or hambuger meat.
Directions
1) you pour a cup of oil into a small flying pan and get it hot enough that’s its not boiling. You want to put tortillas into it without getting them hard. so I do about 20 second on each side.
2) get the enchilada sauce hot and to a boil.
at this point you want to turn on the oven to 250 and get it preheated.
3) Once the sauce is done you will get the tortillas lightly covered in the sauce and put a palm full of cheese into the tortillas... roll them so the opening is on the bottom.
4) cont.. to fill and roll and fill pan with filled tortillas.
5) Pour remaining sauce on the top of rolled tortillas.
6) put in oven until the sauce boils.
7) Enjoy.. I put it on romaine lettuce with salsa and light sour cream.
** I line the pan with foil before I put anything in there to reduce the mess. Not necessary though.
