Introduction

I often use this as a replacement for a quick lunch or dinner. It's a little higher in calories then I thought, but you can use less avocado to decrease calories. OR if you are like me and can't always get enough calories, this is a perfect, healthy, YUMMY addition. I often use this as a replacement for a quick lunch or dinner. Ingredients

    1 Avocado
    1 hard boiled egg
    1 Roma Tomato
    Chopped onion (about 1/4 onion)
    1 - 2 oz of White Cheese
    Olive Oil 1 tsp

Directions

Peel and pit avocado and egg.

Fine chop avocado, egg, tomato and onion.
Mix ingredients, including cheese.
Drizzle lightly with olive oil
Salt and Pepper to taste
May also drizzle with lemon juice if interested.

Makes 1 serving as a replacement for a light dinner, or two servings for a lower-calorie "lettuce-less salad"
