Introduction

Ingredients

    1 Can Campbell's 98% Fat Free Cream of Chicken Soup
    1 Can (small) Green Chiles Sliced
    1 Roma Tomato, diced (canned is fine--watch sodium) or favorite tomato salsa
    2 tbsp Reduced Fat or Fat Free Sour Cream
    1/2 Cup of Fat Free Milk
    8 ounces Chicken Breasts (boneless/skinless) cooked through then shredded or diced
    6 Corn Tortillas, cut (I use kitchen shears that are designated strictly in the kitchen for food to cut them into bite-size pieces)
    1 cup of Cheese, Cheddar or Colby/Low Fat

Directions

Makes at least 5 large helpings:
Preheat Oven to 375, Prepare Chicken breasts in skillet, cook through (medium or medium low) (Tip: I use a little fat free chicken broth instead of oil if sticking is occurring). In a casserole dish (spray with nonstick cooking spray like Pam), combine soup, sour cream, milk, tortillas, green chiles, tomatoes and 1/2 cup of cheese. Once chicken is cooked through, add to mixture. Stir well, top with remaining cheese. Bake 20-30 minutes, until mixture is bubbly. Serve.

Serving suggestion: I serve this with a small green salad or corn/black bean mix.

*** Using fat free sour cream will lower the calories/fat in this recipe a bit. Recipe nutritionals made w/ reduced fat sour cream.
