Introduction
I've used this recipe with dry lasagne noodles for 30 years. It's excellent and now I come to find out through this feature of Sparkpeople that it's also relatively low in calorie. Ingredients

Meatless (Vegetarian) Lasagne
2 cartons (12 oz each) small curd cottage cheese
1 cup grated Parmesan cheese
1 Tbsp dried parsley
1 1/2 tsp dried oregano
8 ounches uncooked lasagne noodles
3 cups shredded mozzarella cheese
Prepare below Lasagne Sauce. Mix cottage cheese, 1/2 cup of Parmesan cheese, parsley, salt and oregano; reserve.
Heat oven to 350. Reserve 1/2 cup sauce. Layer 1/3 each of the noodles, remaining sauce, mozzarella cheese and cottage cheese mixture in ungreased lasagne pan, 14x8x2 inches or baking pan 13 x 9 x 2 inches. Repeat 2 times. Top with reserved sauce; sprinkle with remaining Parmesan cheese. Bake uncovered 45 minutes. Let stand 15 minutes. 12 servings.
LASAGNA SAUCE
2 cans (15 oz each) tomato sauce
1 can (16 oz ) stewed tomatoes with liquid
3 cans (4 oz each) mushroom with liquid
1 medium onion, chopped (about 1/2 cup)
2 tbsp sugar
2 tbsp dried parsley
1 tsp salt (or less to taste)
1 tsp dried basil
1 clove finely chopped garlic
Heat all ingredients to boiling, stirring occasionally; reduce heat and simmer for 45 minutes.
