I know - you look at the ingredients and think "what the heck?" but I wanted something like mac n cheese one night and this totally worked! Give it a try!!

Number of Servings: 4

Ingredients

    6 oz whole wheat penne
    8 Tbsp Frito Lay Jalapeno Cheddar Cheese Dip
    2 Laughing Cow Light Swiss wedges
    1/4 C nonfat milk
    1 C black beans - rinsed
    1 red bell pepper - diced
    1 large zucchini - diced
    1 pkg sliced mushrooms
    1 T olive oil
    1 tsp cayenne pepper

Directions

Boil the noodles as directed.

Meanwhile in a small saucepan melt together the cheese dip, laughing cow wedges, milk and cayenne pepper. Cook on medium until all is combined and then turn to low and let simmer until the veggies are cooked. Be careful not to scald your sauce.

Saute the veggies in the olive oil until to your desired level of doneness. Add the canned beans to the veggies and heat through (about 1 min). Mix everything together and enjoy.

Makes 4 servings.
