Ingredients

    Bush's Baked Beans 15 oz can
    Rosarita No Fat Traditional Refried Beans 16 oz can
    Canned Diced Tomatoes 14.5 oz can
    Extra Virgin Olive Oil, 1 tbsp
    Onions, raw, 1 small
    Carrots, raw, 1 medium
    Garlic, 3 cloves minced
    Bay Leaves, 2
    Cumin, ground, 1 tsp
    Thyme, ground, 1 tsp
    Cayenne Pepper, ground, .5 tsp
    99% Fat Free Chicken Stock, 4 cups
    Organic Texmati Brown Rice Long Grain, .5 cup dry
    Yellow Sweet Corn, Frozen, 1 cup kernels

Directions

In a four quart non-stick pan saute onion, carrots and garlic in olive oil 5 minutes while you prep the remaining vegetables. Add the beans, rice, tomatoes and their juice, 4 cups chicken stock, bay leaves, cumin, thyme, and cayenne pepper. Season with salt and black pepper to preference. Simmer for approximately 1 hour. Makes approximately 8 servings.
