Introduction

Like the Pannekoeken restaurants used to make. This version uses less butter for lower fat, but still tastes terrific. Ingredients

    1/2 stick Butter
    1/2 C Apple Sauce
    3 med. Apples, thinly sliced
    6 Eggs
    1 1/2 C Skim milk
    1 C Four Flour Bean Mix (Bette Hagman's gluten free mix)
    3 T Granulated sugar
    1 tsp Vanilla
    1/2 tsp Salt
    1 tsp Cinnamon (more or less to taste)
    3 T Brown sugar

Directions

Preheat oven to 425*. Melt butter in 13x9 pan. While butter is melting, slice apples. When butter is melted, add apple slices and apple sauce. Mix a bit. Return to oven until butter sizzles. Do no let brown. While butter and apples are in the oven, mix eggs, milk, flour, white sugar, vanilla, salt, xanthan gum and cinnamon in a large bowl. It's OK for the flour to be a little lumpy. Pour batter over apples. Sprinkle with brown sugar. Bake 20 minutes. Makes 8 4x3" pieces.
