Introduction

This makesa 9x13 pan it really is alot of calories but it is well worth it.
Serve with a salad and be done!!!
It seems time consuming but it really is not. if you put your roast on in the morning it will be ready when you get home and you can make the actual enchiladas.

Ingredients

    3 lb pork roast
    2 cans of green chilies
    1 cup onions
    1/2 cup red bell pepper
    3 cloves garlic
    2 packets of taco seasoning
    3 tablespoons Mrs. Dash chipolete seasoning
    12 corn tortillias
    1 block of 2% Kraft cheddar cheese
    cooking spray
    water

Directions

1. put roast into crock pot with first 5 ingredients as well as about 3 tablespoons mrs. dash chipole seasoning. Put enough water in crock pot to cover about half the roast.

allow to cook for about 6 hours on high or until the meat is falling apart.

shredd meat

spray a 9x13 pan with cooking spray.
In a small skillet, taking 1 tortilla at a time heat them with cooking spray 6 tortillias on the bottom of each pan.
put a layer of meat.
put another layer of 6 tortillias and add meat. top with cheese.
bake in oven for about 1hour.

There should be 10 servings.
There really is no room for anything else except maybe a side salad.
