Introduction
This is a recipe that my mother used to make for me when I was a child to help me eat my vegetables. Although I don't make it often, it has remained one of my favorite snacks! -
One tube of crescent rolls, uncooked
1c Fresh chopped broccoli
3/4 cup Fresh grated carrots
6-7oz Neufchatel cheese, room temperature (or fat free cream cheese)
3tbsp Fat free or reduced fat ranch dressing
3tbsp Mayonaise
Herb seasonings of your choice
Directions
Roll the crescent rolls into one large square and press seams together. Bake at 350 degrees for approx 10-15 minutes (oven times may vary).
In a medium bowl, mix together neufchatel cheese, ranch dressing, mayonaise, and seasonings until well blended. You may add a little milk if you like it creamier.
Mix chopped broccoli and grated carrots together.
When the crescent square is golden brown, remove it from the oven and allow to cool. Spread the cheese mixture evenly over the cooled crescent and top with the broccoli/carrot mixture.
Cut into squares of your desired size and enjoy!
