This recipe is made in an electric skillet with deep sides. I have not yet tryed oven or stove top methods. Ingredients

    2 - 29 oz. cans Sliced Peaches in extra light syrup
    1/4 c. Minute brand tapioca flakes
    3 c. Whole Wheat Flour
    3/4 c. firmly packed brown sugar
    2 1/2 tsp. baking powder
    3/4 tsp. baking soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground allspice
    2 eggs
    3/4 c. natural apple sauce
    1 1/2 c. Light Vanilla Soy Milk

Directions

Put peaches (with juice) and tapioca in a 12" electrical skillet. Set temperature to 175 while you prepare the dough. In a large mixing bowl combine dry ingredients. Mix well. Then add eggs, applesauce, and soy milk. Stir until all dry ingredents are moistened. Drop dough by spoonful on top of peaches. Let cook for 10 minutes uncovered and then 10-15 minutes covered - until dough is cooked and springs back when touched. Serve with soy milk, half and half, or cream to pour over the top (not calculated into the nutritional portion of this recipe).
