Introduction

Put the couscous into a large bowl, add the boilling water, cover and set aside for 10 minutes while preparing the remaining ingredients. Put the peppers, zucchini, onions, tomatoes and garlic in a grill pan in one layer, deizzle with oil and cook under a preheated broiler for 5-6 minutes, turning the vegetables occasionally. Ingredients

    couscous 75g (2.5oz)
    boiling water 125ml (0.5cups)
    red pepper 0.25, quartered
    orange pepper 0.25, quartered
    baby zucchini 1.5
    red onion 0.5, cut into wedges
    cherry tomatoes 6
    olive oil 1tsp
    lemon 0.25, grated rind and juice
    chopped parsley 0.5tbsp
    salt and pepper

How to do it

Put the couscous into a large bowl, add the boilling water, cover and set aside for 10 minutes while preparing the remaining ingredients.

Put the peppers, zucchini, onions, tomatoes and garlic in a grill pan in one layer, deizzle with oil and cook under a preheated broiler for 5-6 minutes, turning the vegetables occasionally.

Add the asparagus and broil for 2-3 minutes more until the vegetables are tender and lightly charred (it takes more then 2-3 minutes). When the peppers are cool enought to handle, remove the skins.

Fluff the couscous with a fotk to separate the grains. Toss with the vegetables, lemon rind and the juice, herbs, salt and pepper and serve. I like to add just a drop of olive oil when fluffing.
